Raw Caramel Apple Tart
This summer I had my first experience making a raw tart!!! I couldn't tell you how many instagram pictures of these I've drooled over and how many times I promised myself I'd get off my butt and make one.
They are so simple to make, with less than a handful of ingredients-- I really had no excuse.
Weirdly enough, this baby lasted me a whole 24 hours. {Wildly out of character}. I savoured the heck out of it and enjoyed it in 'smidgeons' -- justifying to myself why I deserve a small treat every hour.
I love apples so much -- they're sweet and crisp and fun to hold, and they really just make me so happy. If you ever want to make my day, just toss me an apple. I'll be your friend forever.
Apples also have natural gorgeous colour that helps to fancy up your plate. Especially thinly-sliced - they can make for a pretty boss presentation. Alas, I may have had a little too much with this one...
So this little tart here was actually the reason I started this blog. As I was munching away on it, I felt the need to get this recipe down on paper before it left my head.
Looking at the scribbled-on napkin in front of me, I was liking the homemade look of it, but I realized there was no way I wasn't going to lose it. So I figured why not save my recipes on my computer, where I can always keep a record of them and also share with you guys.
Ingredients:
Crust:
- 1 cup pecans & cashews mixed
- 6 pitted dates
Filling:
- 1 small apple {I used Royal Gala cause they're my favourite}
- 3 pitted dates
Instructions:
- Blend the 6 pitted dates in a food processor until they form a paste. If you want a finer crust, blend the pecans & cashews separately until fine, then blend again with the date paste. For my tart I just added all the ingredients at once and blended until it was well-combined. {Depends how impatient you are}.
- Mould the crust into shape & squish down until compact. If you have a little tart pan or ramkin you can press the crust into it's shape - if not, never fear, just use a plate and squish the crust into whichever shape and thickness you like.
- Place the crust in the freezer for at least an hour. Meanwhile, make the filling by simply blending the ingredients together. If you want a creamier texture you can also add here some coconut milk and maybe a spoon of raw honey. Blend until desired consistency.
- Pour filling onto the crust and freeze for another two hours.
- Let it thaw for a few minutes after you remove it from the freezer, and top with thinly sliced apples.
