This is what happens when three things come together:
- It's cold outside
- I have to study
- I convince myself I need study snacks
Last Friday was actually quite productive - I made a batch of cookies, took a million pictures of them at every possible angle, and even managed to eat half of them!
ALL IN ONE DAY!
As pathetic as last Friday was, I'm happy about it. It brought this recipe into my life. These sinfully good chocolate chip cookies are grain-free, refined sugar-free, dairy-free, nut-free, and also happen to be low-carb.

I can tolerate legumes though, and I'm a big fan of chickpeas! It gives recipes an extra boost of protein and has endless health benefits.
Nut-free Chocolate Chip Cookies
- 1/4 cup ghee/ butter / coconut oil - slightly softened
- 1 cup coconut sugar
- 1 egg
- 1/8 tsp vanilla
- 1 cup chickpea flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/4 tsp baking powder

1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
2. Mix ghee/butter/coconut oil, coconut sugar, eggs, and vanilla.
3. In a separate bowl, mix chickpea flour, salt, baking soda & baking powder.
4. Add dry ingredients to wet ingredients and mix thoroughly. {CAUTION - do NOT taste the cookie dough!! The chickpea flour needs to cook to get that nutty flavour - before then, they are obviously going to taste a lot like beans. I tried some, and was completely put off from it. I sat, staring at the dough, debating whether to go through with it - but I'm SO happy I did!!
5. Stir in chocolate chunks.
6. Place onto baking sheet in little balls will space in between - {heads up, they WILL spread!}
7. Bake at 350F for 10-15 minutes. These cookies will have to be a little darker than golden brown so that they will set and hold together. Let cool on the baking sheet for a few minutes before removing.
Maybe eat one or two when they're still warm and the chocolate is all melted...
Maybe three...
then cool completely on a wire rack, and enjoy!
