A comforting guilty-pleasure meal made from whole, hearty, nutritious ingredients. Pretty sexy ay? What's more exciting than a cheesy, jacked-up pizza getting its bronze on in the oven? Not many things.
This was one of those - "hmm what's in the fridge... yea okay that could work" meals, that thankfully ended up adhering together pretty well. When in doubt, slap an egg on it and cover in cheese, amiright?
I held my breath when my fiancee bit into the first slice -- but to my relief he actually really enjoyed it! He demolished 3/4 of the pie in the blink of an eye, and concluded his feeding frenzy by saying that he "f*cking loved that". Well that's it then, life goal accomplished -- I can die happy now!
This recipe uses coconut flour and tapioca/ arrowroot starch to make a light, yet chewy dough -- giving it the fibre, protein, and starch it needs to wonderfully mimic the texture of a gluten-full flour.
Eh, not ashamed. :) There was only this one lonely slice left when Charles left to continue studying...
Mama Mia Pizza Dough
Ingredients
- 1 cup tapioca flour or arrowroot powder
- ½ teaspoon sea salt
- optional: 3 tablespoons Romano or Parmesan cheese
- ⅓ cup avocado oil, olive oil, or other fat of choice
- ⅓ cup water ( I used hot water to help the tapioca's absorption)
- 1 tablespoon apple cider vinegar
- 1 clove garlic, finely minced
- 1 egg
- ⅓ cup coconut flour
- optional: 1 teaspoon Italian seasoning
- 3 eggs
- 3 slices proscuitto/ cooked ham
- 1/2 large onion
- chives/ green onion
- butter or oil for frying
- salt & pepper
- italian seasoning
- paprika
- parmesan cheese
- Preheat oven to 450 degrees F.
- In a medium bowl, add in your tapioca flour and sea salt (and cheese, if using). Set aside.
- Mix oil, hot water, apple cider vinegar and minced garlic clove.
- Add mix to your tapioca flour bowl. Stir until combined. Set aside for about 2 minutes to cool.
- Once it's not hot to the touch, add in your egg. Stir until combined.
- Add in your coconut flour (and Italian seasoning, if using) and stir until the coconut flour is absorbed and it becomes dough.
- Form the dough into a ball and press or roll out on a parchment lined or lightly greased pizza stone or baking pan. You will have enough dough to do a 12 to 14 inch circle.
- Bake 14-15 minutes or just until the crust starts to become a very light golden brown.
- While crust is in the oven, prepare toppings: sautee onions in a pan on medium-high heat, until translucent. {olive or coconut oil would work, but ghee/butter adds an extra bit of oomf}. Just saying, sauteed mushrooms would be really nice in here as well!
- Set onions aside, and thinly chop your green onion/chives -- set aside.
- Fry your eggs until ALMOST fully cooked.
- Remove crust from oven, add your toppings: lay the ham down, then the eggs, then sauteed onions, then sprinkle with chives, seasonings and cheese {to taste}. Bake for 3-5 more minutes, pace the kitchen a few times and watch the oven window eagerly. Remove from the oven, sprinkle with fresh cheese, and enjoy!
