Grain-free Bow-tie Pasta
- 1 cup chickpea flour
- 1 egg
- 1 Tblesp olive oil for cooking
- sea salt for cooking
- Scoop the flour into a bowl, and make a well in the middle.
- Crack the egg into the middle, whisk thoroughly, then mix in with the flour.
- Here's the fun part - remove all your rings, and wet your hands SLIGHTLY with warm water. Now use your hands to mix the dough, rubbing the egg into the dough, squeezing it between your fingers, rolling it around, etc.
- Add water if needed {only drop by drop!}
- Cut out 2 large pieces of parchment paper and dust with more chickpea flour.
- Once the dough is completely kneaded and fairly elastic, place it between the two pieces of parchment paper, and roll flat {about 1/4 inch} with a rolling pin, or even just with your hands. I don't have a pasta machine, so I did this part old school - but my first batch was definitely too chunky, so make sure to roll the dough thinner than the picture above!
- Once flattened, remove the top piece of parchment paper and cut the dough into chubby little rectangles.
- Pinch the rectangles in the middle to make the bow-tie.
- You can now freeze these, or cook them right away. To cook, plop them in pot of boiling water with a bit of salt and a Tblesp of olive oil, for 2-4 minutes {until they float, or until they're as soft as you want them to be}. But careful not to leave them in too long so they don't get too mushy.
- Smother it in tomato sauce, pesto sauce, alfredo sauce, or whatever tickles your fancy.
