Maybe it's cause I haven't had a gluten-loaded cinnamon bun in a few years, but I'd go as far as to say these little swirly nuggets are the BEST cinnamon buns I have ever tried. No icing needed. Half the batch was gone before they even had time to cool!
And I'm not ashamed that it was only Charles and I eating them all.
I found it also helped to work with wet hands and rub a little water over the cracks to smooth them out while rolling.
The recipe recommended using floss to cut the cinnamon buns because it gives a cleaner cut than a knife, but Charles had just bought a beautiful sushi knife. So any excuse to use that.
But it's not about coating. It's about burying. It's not just to 'season' the dough or add a slight bit of sweetness -- it's a whole different dimension of the bun, and you will not regret going ham with the filling mix.
Charles also asked for some chia pudding to go with them (love him for loving chia) - so while he was in the shower I had a little too much fun decorating his bowl with cinnamon & coconut sugar. Turned out a little creepier than I had imagined, but still did the trick of making him smile. Smiling at how terrifying it looked, but smiling none the less. :)
